    Start by washing the beets thoroughly. Then, trim the tops and roots, wrap them in aluminum foil, and roast in a preheated oven at 400°F (200°C) for about 45-60 minutes, or until tender. Allow them to cool, peel, and slice into wedges.

    While the beets are roasting, wash the fennel bulb under cold water. Remove the stalks and fronds, then slice the fennel bulb thinly. Reserve some fronds for garnish.
