    Prepare the Marinade

    In a small bowl, combine the yuzu juice, olive oil, salt, and black pepper. Mix well until combined.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Melon Dip

    In a separate bowl, combine the diced melon with a bit of salt and set aside to allow the flavors to meld.

    Sauté Spinach and Mushrooms

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Then, add the sliced mushrooms and cook for about 3-4 minutes until softened. Finally, add the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

    Grill the Salmon

    Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    On a plate, serve the grilled salmon alongside the sautéed spinach and mushrooms. Drizzle the melon dip over the salmon or serve it on the side for dipping.
