Prepare the Steak
Take the bone-in ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. This helps the steak cook evenly.

Rest the Steak
Remove the steak from the grill and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.

Prepare the Potatoes
Peel the russet potatoes and cut them into long, thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. This helps them become crispier when fried.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Fry the Potatoes
Drain and pat the soaked fries dry. Fry them in batches for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while they are still hot.
