Steak

Frites (French Fries)

Method

Steak Preparation

  1. 1

    Prepare the Steak

Take the bone-in ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. This helps the steak cook evenly.

  2. 2

    Season the Steak

Rub the steak with olive oil, then generously season both sides with salt, black pepper, and fresh rosemary.

  3. 3

    Preheat the Grill

Prepare your charcoal grill for high heat. Once the coals are glowing red and covered with gray ash, the grill is ready.

  4. 4

    Grill the Steak

Place the steak on the grill and cook for about 4-5 minutes on one side. Flip and cook for another 4-5 minutes for medium-rare doneness. Adjust cooking time based on your preferred doneness.

  5. 5

    Rest the Steak

Remove the steak from the grill and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.

Frites Preparation

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into long, thin strips to form fries.

  2. 7

    Soak the Fries

Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. This helps them become crispier when fried.

  3. 8

    Heat the Oil

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

  4. 9

    Fry the Potatoes

Drain and pat the soaked fries dry. Fry them in batches for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

  5. 10

    Drain and Season

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while they are still hot.
