Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain pasta and set aside.

Making the Mushroom Sauce

    Sauté the Mushrooms

    In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallots, sautéing for 2-3 minutes until fragrant.

    Add the Mushrooms

    Add the wild mushrooms to the skillet. Cook for about 5-7 minutes until they are tender and release their moisture.

    Deglaze with Wine

    Pour in the white wine and let it simmer for 3-4 minutes until it reduces slightly.

    Add Cream and Season

    Stir in the heavy cream, chopped parsley, salt, and black pepper. Simmer for another 5 minutes until the sauce thickens slightly.

Combining and Serving

    Combine Pasta and Sauce

    Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Plate the Dish

    Serve the pasta in bowls, garnished with shaved parmesan, gem lettuce, and a drizzle of lemon Caesar dressing. Add parmesan crisps on top for extra crunch.
