    Prep the Rice Vermicelli Noodles

    Bring a pot of water to a boil. Add the rice vermicelli noodles and cook according to package instructions until tender, usually about 3-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Shrimp

    If not already prepared, cook the shrimp by boiling or grilling them until they turn pink and are opaque, about 2-3 minutes per side. Let cool and slice in half if desired.

    Prepare the Vegetables

    Julienne the carrot and cucumber. Rinse the lettuce leaves, mint, cilantro, and basil under cold water and pat dry.

    Soften the Rice Paper Wrappers

    Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it softens. Carefully remove it from the water and lay it flat on a clean surface.

    Place a lettuce leaf on the bottom third of the rice paper wrapper. Add a small amount of rice vermicelli noodles, shrimp, julienned carrot, cucumber, and a few leaves of mint, cilantro, and basil. Be careful not to overfill.
