Fried Chicken Directions
- 1
Prepare the Chicken
Begin by cleaning the whole chicken under cold water. Pat it dry with paper towels, then cut it into pieces (legs, thighs, wings, and breast) if desired.
- 2
Marinate the Chicken
In a large bowl, pour the buttermilk over the chicken pieces, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight for best flavor.
- 3
Prepare the Coating
In another bowl, mix together the all-purpose flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Whisk until well combined.
- 4
Coat the Chicken
Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes. Dredge each piece of chicken in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
- 5
Heat the Oil
In a large, heavy-bottomed skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of flour into it; if it sizzles, it’s ready.
- 6
Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, being careful not to overcrowd the pan. Fry the chicken in batches, cooking for about 12-15 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- 7
Drain and Serve
Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Allow it to rest for a few minutes before serving.
