    Prepare the Chicken Livers

    Rinse the chicken livers under cold water and remove any visible fat or connective tissue. Pat them dry with paper towels.

    Cook the Shallots and Garlic

    In a large skillet, melt 50 grams of the unsalted butter over medium heat. Add the finely chopped shallots and minced garlic, and sauté until they are softened and translucent, about 3-4 minutes.

    Cook the Chicken Livers

    Add the chicken livers to the skillet with the shallots and garlic. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.

    Add Seasoning and Cognac

    Stir in the thyme, salt, black pepper, and nutmeg. Pour in the cognac or brandy and let it simmer for another 2 minutes, allowing the alcohol to evaporate.

    Transfer the mixture to a food processor. Add the remaining 50 grams of butter and the heavy cream. Blend until smooth and creamy, scraping down the sides as necessary.
