Method
Pate Preparation
- 1
Prepare the Chicken Livers
Rinse the chicken livers under cold water and remove any visible fat or connective tissue. Pat them dry with paper towels.
- 2
Cook the Shallots and Garlic
In a large skillet, melt 50 grams of the unsalted butter over medium heat. Add the finely chopped shallots and minced garlic, and sauté until they are softened and translucent, about 3-4 minutes.
- 3
- 4
Add Seasoning and Cognac
Stir in the thyme, salt, black pepper, and nutmeg. Pour in the cognac or brandy and let it simmer for another 2 minutes, allowing the alcohol to evaporate.
- 5
Blend the Mixture
Transfer the mixture to a food processor. Add the remaining 50 grams of butter and the heavy cream. Blend until smooth and creamy, scraping down the sides as necessary.
- 6
Chill the Pate
Transfer the blended pate into a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours or until firm.
- 7
Serve
Once chilled, serve the chicken pate with toasted bread or crackers. Garnish with fresh herbs if desired.
