Method

Crepe Batter Preparation

  1. 1

    Mix the Batter

In a large mixing bowl, combine rice flour, turmeric powder, and salt. Slowly add coconut milk and water, whisking until the batter is smooth and well combined.

  2. 2

    Rest the Batter

Let the batter rest for at least 30 minutes to allow the flour to absorb the liquid.

Filling Preparation

  1. 3

    Prepare the Filling

In a skillet over medium heat, add the sliced pork belly and cook until it's crispy. Add the shrimp and cook until they turn pink. Stir in the chopped green onions and bean sprouts until just wilted.

Cooking the Crepes

  1. 4

    Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease it with oil. Pour a ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges start to lift.

  2. 5

    Add the Filling

Add a portion of the filling to one half of the crepe. Cook for another 1-2 minutes until the crepe is golden brown. Fold the crepe in half and remove from the skillet.

  3. 6

    Repeat

Repeat the process with the remaining batter and filling, greasing the skillet as necessary.

Dipping Sauce Preparation

  1. 7

    Mix the Dipping Sauce

In a small bowl, mix fish sauce, sugar, lime juice, and water until the sugar is dissolved. Stir in the chopped chili for heat.
