Prepare the Pork Belly
Start by preheating your oven to 180°C (350°F). Score the skin of the pork belly and season with salt and black pepper. Place it in a baking dish and roast for about 1 hour, or until the skin is crispy and the meat is tender.

Prepare the Brussel Sprouts
While the pork belly is roasting, trim the ends of the Brussel sprouts and cut them in half. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the Brussel sprouts cut side down and sauté for about 5-7 minutes until browned. Add minced garlic, maple syrup, salt, and pepper, and continue to cook for another 5 minutes until tender.

Sear the Scallops
In a separate skillet, heat the remaining tablespoon of olive oil and 2 tablespoons of butter over high heat. Once the butter is melted and bubbling, add the scallops. Sear for 2-3 minutes on each side until they are golden brown and cooked through. Season with salt and pepper to taste.

Plate the Dish
Once everything is cooked, slice the pork belly and arrange it on a plate along with the sautéed Brussel sprouts. Place the seared scallops on top and drizzle with any remaining maple syrup from the skillet.
