In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, chop into pieces, and set aside. Leave the bacon fat in the pot.

Add the chopped onion, celery, and diced potatoes to the pot with the bacon fat. Sauté for about 5 minutes until the vegetables are slightly softened.

Add Liquids and Seasoning

Pour in the clam juice, heavy cream, and add the thyme, bay leaf, salt, and pepper. Stir well to combine.

Simmer

Bring the mixture to a gentle simmer. Cook for about 15-20 minutes, or until the potatoes are tender.

Add Clams

Add the chopped clams and cook for an additional 5 minutes. Adjust seasoning to taste.
