    In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, green onion, celery, beaten egg, bread crumbs, salt, and black pepper. Gently mix until just combined, avoiding breaking the crab meat too much.

    Using your hands, form the mixture into patties, approximately 2-3 inches in diameter. Place the formed crab cakes on a parchment-lined baking sheet.

    Chill the Crab Cakes

    Cover the baking sheet with plastic wrap and refrigerate the crab cakes for at least 30 minutes to help them hold their shape while cooking.

    In a large skillet, heat 2 tablespoons of oil over medium heat. Once hot, add the crab cakes, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.
