Pumpkin Cheesecake Directions
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- 2
Bake the Crust
Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from oven and let cool.
- 3
Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and brown sugar, mixing until well combined. Add the pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Beat until the mixture is smooth and creamy.
- 4
Combine and Pour
Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula.
- 5
Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly browned. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
- 6
Chill and Serve
Refrigerate the cheesecake for at least 4 hours, or overnight. Remove from the springform pan, slice, and serve chilled.
