    Prepare the Chicken

    Preheat the oven to 400°F (200°C). In a bowl, mix olive oil, garlic powder, paprika, thyme, salt, black pepper, and lemon juice. Coat the chicken breasts in the mixture and let marinate for at least 30 minutes.

    Roast the Potatoes

    While the chicken is marinating, wash and halve the baby potatoes. Toss them in olive oil, rosemary, oregano, salt, and pepper. Spread on a baking sheet and roast in the oven for about 25-30 minutes, until golden and crispy.

    Cook the Chicken

    Place the marinated chicken breasts on a baking sheet and bake in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).

    Prepare the Salad

    If choosing salad, combine mixed greens, sliced cucumber, and halved cherry tomatoes in a bowl. Drizzle with dressing of choice before serving.
