Prepare the Pork Belly
Cut the pork belly into small cubes. Season with salt, black pepper, and chili powder. Heat olive oil in a skillet over medium heat and cook the pork belly until crispy. Set aside.

Fry the Pork Skins
Heat oil in a deep fryer or a pot to 180°C (350°F). Carefully add pork skins and fry until they puff up and turn golden brown. Remove and drain on paper towels.

Prepare the Roasted Corn Salsa
In a bowl, combine the roasted corn kernels with some chopped cilantro, salt, and pepper to taste. Mix well.

Assemble the Nachos
On a serving platter, layer the fried pork skins, drizzle with white queso, sprinkle with crispy pork belly, and top with roasted corn salsa. Finish with dollops of crème fraîche and garnish with cilantro.
