Pesto Crusted Chicken Parmesan

Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper.

Dredge the Chicken
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove from heat.

Add Pesto and Cheese
Spread pesto sauce evenly on top of each chicken breast. Sprinkle mozzarella and Parmesan cheese over the pesto.

Bake the Chicken
Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.

Cook the Pasta
While the chicken is baking, cook the pappardelle pasta according to package instructions. Drain and set aside.

Plate the pappardelle pasta and top with Arrabbiata sauce. Serve the pesto crusted chicken on top and enjoy!
