    Make the Tart Crust

    In a mixing bowl, combine the flour, sugar, and salt. Add the softened butter and rub it into the flour mixture until it resembles coarse crumbs. Stir in the egg yolk and cold water until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and bake for 20-25 minutes or until golden brown. Let it cool completely.

    Prepare the Filling

    In a medium bowl, combine 1 cup of heavy cream, 0.5 cups of powdered sugar, and 1 tsp of vanilla extract. Whisk until soft peaks form.

    Assemble the Tart

    Spread the cream filling evenly over the cooled tart crust. Arrange a variety of fresh fruits on top, such as strawberries, blueberries, kiwi, and raspberries. Brush the fruits with a little honey or apricot glaze for shine, if desired.
