Mix the Cheese
In a large mixing bowl, combine the white cheddar and jalapeño cheddar cheeses. Set aside.

Form the Bites
Take small portions of the cheese mixture and form them into bite-sized balls or squares.

Bread the Cheese Bites
Coat each cheese bite in flour, dip it in the egg, and then roll it in the bread crumbs until fully coated.
Frying

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cheese Bites
Carefully place the breaded cheese bites in the hot oil and fry them in batches until golden brown, about 3-4 minutes per side.

Remove the cheese bites and let them drain on paper towels. Serve hot with the tangy dipping sauce.
