Prepare the Duck Filling
Cook the duck breast in a skillet over medium heat until fully cooked. Let it cool, then shred the meat into small pieces.

Mix the Filling
In a bowl, combine the shredded duck, finely chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well.

Fill the Won Tons
Place a won ton wrapper on a clean surface. Spoon about 1 tablespoon of the duck mixture into the center of the wrapper. Moisten the edges with water and fold the wrapper in half to form a triangle. Press the edges to seal. Repeat with the remaining wrappers and filling.

Cook the Won Tons
Bring a pot of water to a boil. Gently drop the filled won tons into the boiling water and cook for about 4-5 minutes, or until they float to the surface. Remove with a slotted spoon.

Serve the duck won tons hot with sweet chili sauce on the side for dipping.
