Preparation of the Crab Stuffed Winter Flounder

Prepare the Filling
In a mixing bowl, combine the crab meat, cream cheese, green onions, garlic powder, lemon juice, salt, black pepper, and paprika. Mix well until all ingredients are fully incorporated.

Stuff the Flounder
Lay the winter flounder fillets on a clean surface. Place a generous spoonful of the crab filling onto the center of each fillet. Fold the fillet over to enclose the filling and secure with toothpicks if necessary.

Make the Sauce
In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream and add saffron threads. Stir well and let it simmer for about 5 minutes until slightly thickened. Season with salt and black pepper.

Coat and Fry
Roll each croquette in bread crumbs to coat. Heat oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides, about 3-4 minutes. Drain on paper towels.

On a plate, place the stuffed winter flounder and drizzle with saffron cream sauce. Serve with potato croquettes on the side.
