Prepare the caramel
In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring constantly until the sugar dissolves. Increase heat and bring to a boil without stirring. Cook until the mixture turns a deep amber color, about 8-10 minutes. Quickly pour the caramel into a round cake pan, tilting to coat the bottom evenly. Set aside to cool and harden.

Bake the flan
Preheat your oven to 350°F (175°C). Pour the chocolate mixture over the cooled caramel in the cake pan. Place the cake pan in a larger baking dish and fill the larger dish with hot water until it reaches halfway up the sides of the cake pan. Bake for about 50-60 minutes, or until the flan is set but still slightly jiggly in the center.

Cool and serve
Remove the flan from the water bath and let it cool to room temperature. Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, invert onto a serving plate, and let the caramel drizzle over the top.
