Prepare the Chicken
Preheat the oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and pound them to about 1/2 inch thickness. Season with salt and pepper.

Assemble the Cordon Bleu
On each chicken breast, place a slice of ham and a slice of Swiss cheese. Roll the chicken tightly and secure with toothpicks.

Breading the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each chicken roll in flour, dip in the egg, and then coat with bread crumbs.

Cook the Chicken
In a large skillet, heat olive oil and butter over medium heat. Add the chicken rolls and cook until golden brown on all sides, about 4-5 minutes per side. Transfer to a baking dish.

Bake in the preheated oven for about 20 minutes, or until the chicken is cooked through and the cheese is melted.

In a small bowl, mix together Dijon mustard and milk. Drizzle over the chicken before serving.
