    Prepare the Risotto

    In a saucepan, bring vegetable broth to a simmer. In a separate pot, melt 1 tablespoon of butter over medium heat. Add sliced mushrooms and cook until softened. Stir in Arborio rice and cook for 2 minutes, stirring frequently. Gradually add the warm vegetable broth, one ladle at a time, stirring constantly until absorbed. Continue until rice is creamy and al dente, about 18-20 minutes. Stir in spinach, Parmesan, and the remaining butter. Season with salt and pepper to taste.

    Blacken the Sea Bass

    Pat the sea bass fillets dry and season generously with Cajun seasoning on both sides. Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the seasoned fillets and cook for about 3-4 minutes on each side until the fish is cooked through and has a blackened crust.

    Serve

    Place a generous serving of spinach mushroom risotto on each plate. Top with the blackened sea bass fillet and serve with lemon wedges on the side. Accompany with your choice of soup or salad.
