Prepare the Apples
In a large bowl, combine the sliced apples, sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and salt. Toss until the apples are evenly coated. Let the mixture sit for about 15 minutes to allow the flavors to meld.
Preheat the Oven
Preheat your oven to 425°F (220°C).
Prepare the Pie Crust
Roll out your pie crust and fit it into a 9-inch pie dish. Trim the edges, leaving a small overhang.
Fill the Pie
Pour the apple filling into the prepared pie crust, making sure to distribute the apples evenly.
Add the Top Crust
Roll out the top crust and place it over the filling. Cut slits in the top crust to allow steam to escape and crimp the edges to seal.
Bake the Pie
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them with foil.
Cool and Serve
Allow the pie to cool for at least 30 minutes before slicing. Serve warm or at room temperature, optionally with ice cream.
