Prepare the Asparagus
Trim the woody ends off the asparagus and blanch them in boiling salted water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Cook the Wagyu Sirloin
Season the Wagyu sirloin with salt and pepper. In a hot skillet, sear the sirloin for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and salt. Place the bowl over a pot of simmering water and whisk continuously until the mixture thickens. Gradually add melted butter while whisking until smooth. Add cayenne pepper and adjust seasoning to taste.

Assemble the Dish
On a plate, place the sliced Wagyu sirloin, top it with the Maryland blue crab, and arrange the blanched asparagus on the side. Drizzle with the hollandaise sauce and serve immediately.
