Preparing the Fries

Cut the Potatoes
Peel the russet potatoes and cut them into long strips, about 1/4 inch thick.

Dry the Potatoes
Drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

First Fry
Fry the potatoes in batches for about 4-5 minutes until they are soft but not browned. Remove them and drain on paper towels.

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until golden brown. Season with salt.
Preparing the Fish

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C) for frying the fish.

Batter the Fish
Dip each fish fillet into the batter, ensuring they are fully coated.

Fry the Fish
Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve the crispy fish alongside the hot fries. Garnish with lemon wedges and serve with tartar sauce on the side.
