Calamari Preparation

    Clean and Prepare Calamari

    Rinse the fresh calamari under cold water and pat dry with paper towels. If they are whole, slice them into rings about 1/2 inch thick.

    Marinate Calamari

    Place the calamari rings in a bowl and pour the buttermilk over them. Let them marinate for at least 30 minutes in the refrigerator.

    Prepare the Breading

    In a large bowl, combine flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Heat the Oil

    In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Bread the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are thoroughly coated.

    Fry the Calamari

    Carefully place the breaded calamari in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Season with additional salt if desired.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the saucepan. Stir to combine.

    Simmer Sauce

    Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

    Finish with Fresh Parsley

    Once the sauce has thickened slightly, remove from heat and stir in the chopped fresh parsley.
