Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and resembles wet sand.

Bake the Crust
Bake the crust for 8-10 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.

Blend Filling Ingredients
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well incorporated.

Add Remaining Ingredients
Add sour cream, vanilla extract, eggs, and cornstarch. Mix on low speed until just combined. Do not overmix.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in the oven for another hour.

Cool and Refrigerate
Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

Cook the Berries
In a small saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice.

Simmer the Sauce
Cook until the berries break down and the sauce thickens, about 10-15 minutes. Stir occasionally to prevent sticking.

Remove from heat and let it cool before serving.
