Prepare the Filling
In a pan, heat a little oil and sauté the onions until translucent. Add ginger, green chilies, and cook for another minute. Stir in the mashed potatoes, green peas, coriander powder, cumin powder, garam masala, salt, and fresh coriander. Mix well and cook for 5-7 minutes. Set aside to cool.

Make the Dough
In a mixing bowl, combine all-purpose flour, salt, and oil. Gradually add water to form a smooth dough. Knead for about 5 minutes, then cover with a damp cloth and let it rest for 20-30 minutes.

Assemble the Samosas
Divide the dough into small balls. Roll out each ball into a thin oval shape. Cut it in half to form two semi-circles. Take one semi-circle, form a cone by folding and sealing the edge with water. Fill the cone with the potato-pea mixture and seal the top by pressing the edges together.

Fry the Samosas
In a deep frying pan, heat oil over medium heat. Fry the samosas in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
