Prepare Jalebi

Make the Jalebi Batter

In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, yogurt, and water. Mix well to form a smooth batter. Add turmeric powder for color and mix until well combined. Let it rest for 30 minutes.

Prepare Sugar Syrup

In a saucepan, combine sugar and water. Bring to a boil, then reduce heat and add crushed cardamom and saffron. Simmer until the syrup reaches a one-string consistency (about 10 minutes). Keep warm.

Fry the Jalebis

Heat oil in a deep frying pan over medium heat. Pour the batter into a piping bag or squeeze bottle. Squeeze the batter in a circular motion to form spiral shapes in the hot oil. Fry until golden and crisp, then remove and soak in the warm sugar syrup for a few minutes.

Serve

Plate the Dahi-Jalebi

Remove the soaked jalebis from syrup and place them on a serving plate. Serve with a generous dollop of plain yogurt on the side. Garnish with chopped pistachios.
