    Prepare the Batter

    In a large mixing bowl, combine chickpea flour, salt, turmeric, cumin seeds, and red chili powder. Gradually add water while whisking until you have a smooth batter.

    Add Vegetables

    Fold in the chopped coriander, potato, onion, spinach, and cauliflower into the batter until well coated.

    Heat the Oil

    In a deep frying pan, heat oil over medium-high heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

    Fry the Pakoras

    Using a spoon, drop small portions of the vegetable mixture into the hot oil. Fry in batches until golden brown and crispy, about 4-5 minutes per batch.

    Drain and Serve

    Remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with chutney.
