    Prepare the Vegetables

    Wash and chop the vegetables into small pieces. Combine potato, cauliflower florets, spinach, grated carrot, and sliced onion in a large bowl.

    Make the Batter

    In another bowl, mix chickpea flour, rice flour, turmeric, cumin, coriander, red chili powder, and salt. Gradually add water and stir until you achieve a smooth batter consistency.

    Pour the batter over the chopped vegetables and mix well to coat all the vegetables evenly.

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium heat until hot.

    Fry the Pakoras

    Carefully drop spoonfuls of the vegetable-batter mixture into the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
