Prepare the Filling
Boil the potatoes until soft. Peel and mash them. In a pan, heat oil and add cumin seeds, chopped onions, and ginger. Sauté until onions are golden. Add green peas, coriander powder, garam masala, chopped green chili, salt, and mix well. Finally, add the mashed potatoes and fresh coriander leaves. Cook for 2-3 minutes and set aside to cool.

Make the Dough
In a mixing bowl, combine all-purpose flour with a pinch of salt. Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Shape the Samosas
Divide the dough into small balls. Roll each ball into a thin oval shape. Cut it in half to form two semicircles. Take one semicircle, fold it into a cone shape, sealing the edge with a little water. Fill the cone with the potato filling and seal the open edge by pinching it together.

Fry the Samosas
Heat oil in a deep frying pan. Once hot, carefully slide the samosas into the oil. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
