Prepare the Filling
Boil the potatoes until soft. Peel and mash them in a large bowl. Heat a tablespoon of oil in a pan and add mustard seeds. Once they splutter, add chopped green chilies, ginger, turmeric powder, coriander powder, garam masala, and salt. Mix well and then add the mashed potatoes. Combine everything thoroughly and let it cool.

Prepare the Batter
In another bowl, mix gram flour, baking soda, and a pinch of salt. Gradually add water to make a smooth, thick batter.

Fry the Vadas
Once the potato filling is cool, form small balls from the mixture. Heat oil in a deep frying pan. Dip each ball into the batter and fry until golden brown. Remove and drain on paper towels to absorb excess oil.

Assemble the Vada Pav
Slice the pav buns horizontally without cutting all the way through. Place a fried vada inside each bun. Add a sprinkle of dry garlic chutney, a layer of green chutney, and top with chopped coriander leaves.
