    Prepare the Spinach

    Wash the fresh spinach thoroughly. Boil in salted water for 2-3 minutes until wilted. Drain and immediately transfer to cold water. After a few minutes, drain again and blend into a smooth paste.

    Cook the Onions

    In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add finely chopped onion and sauté until golden brown.

    Add Tomatoes and Spices

    Add chopped tomatoes and ginger-garlic paste to the pan. Cook until the tomatoes are soft. Add turmeric, coriander powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.

    Combine Spinach and Paneer

    Stir in the spinach paste and mix well. Add cubed paneer and garam masala. Cook for another 5 minutes on low heat, stirring gently to combine.

    Serve

    Once everything is well combined and heated through, check for seasoning and adjust if necessary. Serve hot with naan or rice.
