    Prep the Spinach

    Wash the fresh spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immerse in cold water. Once cooled, blend the spinach into a smooth paste.

    Prep the Paneer

    If using store-bought paneer, cut it into small cubes. If making fresh paneer, press the curds and cut them into cubes after cooling.

    Sauté the Base

    Heat oil or ghee in a pan over medium heat. Add cumin seeds and wait until they splutter. Add chopped onions and sauté until golden brown.

    Add Aromatics

    Stir in minced garlic and ginger, cooking for 1 minute until fragrant.

    Mix in Spices

    Add the pureed tomato, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture.

    Combine Spinach and Paneer

    Add the spinach paste and water to the pan. Stir well and add the paneer cubes. Let it simmer for 5-7 minutes.

    Finish with Garam Masala

    Sprinkle garam masala over the top, mix gently, and cook for an additional 2 minutes.
