Preparing the Cheese Balls

    Curdle the Milk

    In a large pot, bring the milk to a boil. Once boiling, add lemon juice and stir until the milk curdles. Remove from heat and let it sit for 5 minutes.

    Strain the Curdled Milk

    Line a sieve with cheesecloth and strain the curdled milk. Rinse with cold water to remove the lemon flavor. Gather the cheesecloth and squeeze out excess water.

    Knead the Chena

    Transfer the curds (chena) to a plate and knead for about 5-7 minutes until smooth.

    Shape the Cheese Balls

    Divide the kneaded mixture into small balls (about 1 inch in diameter).

Making the Milk Syrup

    Prepare the Syrup

    In a large pot, combine water and sugar, bring to a boil, and add cardamom pods. Simmer for 5 minutes.

    Cook the Cheese Balls

    Gently add the cheese balls to the boiling syrup and cook for 10-12 minutes until they double in size.

Final Assembly

    Make the Milk Sauce

    In a separate pot, boil 2 cups of milk with sugar and saffron until it thickens slightly. Add cardamom powder.

    Assemble Rasmalai

    Soak the cooked cheese balls in the milk sauce for at least 30 minutes before serving. Garnish with chopped pistachios.
