Preparing the Kachori

Making the Dough
In a large bowl, combine all-purpose flour, semolina, and salt. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Rolling and Frying
Divide the dough into small balls. Roll each ball into a thin disc. Heat oil in a deep pan. Gently slide each disc into the hot oil and fry until puffed and golden brown. Remove and drain on paper towels.

Filling the Kachori
Carefully break the top of each kachori to create a hollow space. Fill it with mashed potatoes, cooked chickpeas, tamarind chutney, and mint chutney.

Drizzle sweet yogurt over the filled kachori, sprinkle chaat masala, and top with crispy sev and chopped coriander leaves.
