Preparing the Vada

Make the Masala
In a pan, heat a little oil. Add cumin seeds, chopped green chilies, and grated ginger. Sauté for a minute. Add the mashed potatoes, turmeric powder, and salt. Mix well and let it cool.

Shape the Vadas
Once the potato mixture has cooled, shape it into small balls.

Prepare the Batter
In a bowl, mix rice flour, baking soda, and enough water to make a thick batter.

Fry the Vadas
Heat oil in a deep pan. Dip each potato ball in the batter and fry until golden brown. Remove and drain on paper towels.
Preparing the Chutneys

Make Tamarind Chutney
In a bowl, mix tamarind paste, sugar, and salt. Adjust the sweetness and sourness to taste.

Make Mint Chutney
Blend mint leaves, coriander leaves, green chili, lemon juice, and salt until smooth. Add a little water if needed.
Assembling the Vada Pav

Prepare the Pav
Slice the pav buns horizontally and spread butter on the inside.

Assemble the Vada Pav
Place a fried vada inside each pav bun. Add a spoonful of tamarind chutney and mint chutney. Close the bun and serve hot.
