Method

To Make the Pattice

    Prepare the Potatoes

    Boil the potatoes until soft, peel and mash them. Grate the raw mango and mix with the mashed potatoes.

    Mix Ingredients

    Add cumin seeds, chopped green chilies, chopped cilantro, and salt to the potato mixture. Mix well.

    Form Patties

    Shape the mixture into small, flat patties.

    Fry Patties

    Heat oil in a pan and fry the patties until golden brown on both sides. Remove and drain on a paper towel.

To Make the Ragda

    Sauté the Base

    In a pot, heat oil and sauté chopped onions until translucent. Add ginger-garlic paste and stir for a minute.

    Add Tomatoes and Spices

    Add chopped tomatoes, cumin powder, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.

    Add Chickpeas and Water

    Add cooked chickpeas and water. Bring to a boil and let simmer for 10-15 minutes. Stir in garam masala.

To Serve

    Prepare Spiced Yogurt

    In a bowl, mix yogurt with salt and chaat masala.

    Assemble the Dish

    Serve the fried patties topped with ragda, spiced yogurt, coriander chutney, and tamarind chutney.
