Prepare the crispy flatbreads

Make the dough
In a bowl, combine all-purpose flour, semolina, and salt. Gradually add water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Roll and fry
Divide the dough into small balls. Roll each ball into a thin circle. Heat oil in a frying pan and deep fry the flatbreads until golden brown and crispy. Drain on paper towels and set aside.

Layer the toppings
On each crispy flatbread, spread a generous amount of yogurt. Drizzle with tamarind and mint chutneys. Sprinkle chaat masala and red chili powder over the top.

Finish with garnishes
Add finely chopped onions and coriander leaves. Finally, top with sev for extra crunch. Serve immediately.
