    Prepare the Chutney

    In a blender, add mint leaves, cilantro, green chili, ginger, lemon juice, and salt. Blend until smooth to form the chutney.

    Stuff the Paneer

    Cut the paneer into thick slices. Make a small pocket in each slice and fill it with the prepared chutney. Press to seal.

    Make the Batter

    In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, and salt. Gradually add water to create a smooth, thick batter.

Cooking

    Fry the Pakoras

    Heat oil in a deep frying pan over medium heat. Dip each stuffed paneer slice into the batter, ensuring it's fully coated, and carefully place in the hot oil. Fry until golden brown on both sides. Remove and drain on paper towels.
