    Prepare the Vegetables

    Wash and chop the mixed vegetables into bite-sized pieces.

    Soak Cashews

    Soak the cashew nuts in warm water for about 15 minutes, then drain.

    Cook the Base

    In a large pan, heat ghee or oil over medium heat. Add cumin seeds and let them sizzle. Add the chopped onion and sauté until golden brown.

    Add Aromatics

    Stir in the ginger-garlic paste and slit green chili. Cook for another minute until fragrant.

    Cook Vegetables

    Add the mixed vegetables, turmeric powder, and salt. Stir well and cook for about 5-7 minutes until the vegetables are tender.

    Make Cashew Paste

    Blend the soaked cashews with coconut milk to make a smooth paste.

    Combine and Simmer

    Add the cashew-coconut mixture to the vegetables. Stir in garam masala and simmer for another 5 minutes.

    Garnish with chopped fresh coriander leaves and serve hot with rice or gluten-free bread.
