Method

Prepare the Potato Filling

    Boil and Mash Potatoes

    Boil the potatoes until tender, then peel and mash them in a bowl.

    Temper Spices

    In a pan, heat a little oil. Add cumin and mustard seeds, and let them splutter. Then add chopped green chilies and sauté for a minute.

    Mix Filling Ingredients

    Add the tempered spices to the mashed potatoes. Stir in turmeric, garam masala, salt, and fresh coriander. Mix well and let it cool.

Prepare the Batter

    Mix the Batter

    In a bowl, combine gram flour, rice flour, turmeric powder, baking soda, and salt. Gradually add water while whisking to form a smooth batter.

Fry the Vadas

    Heat Oil

    In a deep frying pan, heat oil over medium heat.

    Form and Fry

    Take a small portion of the potato filling, shape it into a ball, dip it into the batter, and carefully drop it into the hot oil. Fry until golden brown on all sides.

    Drain Excess Oil

    Remove the fried vadas and place them on paper towels to drain excess oil.

Serve

    Serve Hot

    Serve the Mumbai Vada hot with green and tamarind chutneys.
