Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, combine the chicken wings with salt, black pepper, and sula masala dry rub. Toss well to ensure the wings are evenly coated.

Coat with Cornstarch
Sprinkle the cornstarch over the seasoned wings and toss again until all wings are coated. This will help achieve a crispy texture.

Heat the Oil
In a deep frying pan or a large pot, heat the oil to 350°F (180°C). You can use a deep-fry thermometer to check the temperature.

Fry the Wings
Once the oil is hot, carefully add the wings in batches, being sure not to overcrowd the pan. Fry the wings for about 8-10 minutes or until golden brown and crispy.

Drain and Toss
Using a slotted spoon, remove the wings from the oil and drain them on paper towels. While they are still hot, toss the wings in a bowl with additional sula masala dry rub if desired.

Serve the crispy masala fried wings hot with your favorite dipping sauce.
