    Prepare the Ingredients

    Rinse the black-eyed peas under cold water and soak them in water for at least 4 hours or overnight. Peel and dice the potatoes into small cubes. Chop the onion, tomatoes, garlic, and ginger.

    Cook the Base

    In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add the chopped onion and sauté until golden brown.

    Add Spices

    Stir in the garlic and ginger, sautéing for 1-2 minutes. Add the turmeric powder, red chili powder, coriander powder, and salt. Cook for another minute.

    Incorporate Tomatoes and Potatoes

    Add the chopped tomatoes and cook until they soften. Then, add the diced potatoes and mix well.

    Add Black-eyed Peas

    Drain the soaked black-eyed peas and add them to the pot. Stir everything together.

    Simmer

    Pour in enough water to cover the mixture and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 30-35 minutes, or until the peas and potatoes are tender.

    Once cooked, stir in the garam masala. Garnish with fresh cilantro. Serve hot with rice or roti.
