    Marinate the Lamb

    In a bowl, combine the lamb cubes, vinegar, garlic, ginger, turmeric, red chili powder, salt, and brown sugar. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

    Prepare the Spice Mix

    In a dry skillet over medium heat, toast the mustard seeds, cumin seeds, and coriander seeds until fragrant, about 2-3 minutes. Allow to cool, then grind into a fine powder.

    Cook the Lamb

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown. Stir in the marinated lamb and cook until browned on all sides.

    Add Other Ingredients

    Add the toasted spice mix, tomato paste, and coconut milk to the pot. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add water if necessary to prevent sticking.

    Adjust Seasoning

    Taste and adjust seasoning with salt and additional red chili powder if desired. Serve hot.
