    Prepare the Ingredients

    Gather all the ingredients and chop the spinach, onion, and garlic.

    Sauté the Onions

    In a large pan, heat the coconut oil or ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onions and sauté until they are golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger. Cook for another 2-3 minutes until fragrant.

    Cook the Lamb

    Add the cubed lamb to the pan and brown on all sides. Stir in the turmeric, coriander powder, and salt. Cook for about 5 minutes.

    Add Tomatoes and Spinach

    Pour in the pureed tomato and cook for another 5 minutes. Then, add the chopped spinach and green chili. Stir well and cover the pan.

    Simmer

    Let the curry simmer on low heat for 30-40 minutes, or until the lamb is tender and the spinach has wilted down.

    Finish with Spices

    Stir in the garam masala and adjust salt to taste. Cook for an additional 5 minutes.
