    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

    Marinate the Meat or Vegetables

    If using meat, marinate it with salt, garlic, ginger, turmeric, and some yogurt (optional) for at least 30 minutes.

Cooking

    Fry Onions

    Heat oil or ghee in a large pot over medium heat. Add the sliced onions and fry until golden brown.

    Add Spices

    Add cumin seeds, cardamom, cloves, and cinnamon stick. Sauté for a minute until fragrant.

    Cook Meat or Vegetables

    Add the marinated meat or mixed vegetables and sauté until the meat is browned or vegetables are tender.

    Add Rice and Water

    Stir in the soaked and drained rice, then add water. Bring to a boil and add salt, coriander powder, and garam masala.

    Simmer

    Reduce heat to low, cover tightly, and let it cook for about 20-25 minutes, or until the rice is cooked and water is absorbed.

    Garnish

    Once cooked, fluff the biryani with a fork, and garnish with chopped cilantro, mint, and saffron if using.
