    Prepare the Spices

    In a dry skillet, toast cumin and coriander seeds until fragrant. Let them cool, then crush them coarsely using a mortar and pestle.

    Caramelize the Onions

    Heat oil in a pan over medium heat. Add pearl onions and sauté until they turn golden brown and caramelized. Remove from the pan and set aside.

    Sauté Aromatics

    In the same pan, add ginger and garlic. Sauté until fragrant, about 1-2 minutes.

    Cook the Peppers

    Add diced green and red bell peppers to the pan. Cook for about 3-4 minutes until they start to soften.

    Add Tomatoes and Spices

    Add chopped plum tomatoes, turmeric powder, crushed spices, and salt. Cook until tomatoes are soft and the mixture is well combined, about 5-7 minutes.

    Incorporate Paneer

    Add cubed paneer to the tomato and spice mixture. Gently mix to coat the paneer without breaking it.

    Finish with Garam Masala

    Sprinkle garam masala over the curry and gently stir. Cook for another 2-3 minutes to allow flavors to meld.

    Garnish and Serve

    Remove from heat, garnish with fresh coriander leaves, and serve hot with rice or bread.
