    Prepare the Ingredients

    Chop the cauliflower into florets and dice the potatoes. Finely chop the onion, mince the garlic, and grate the ginger.

    Sauté Onions and Spices

    In a large pan, heat the oil over medium heat. Add the chopped onion and sauté until golden brown. Add the minced garlic and grated ginger, cooking for an additional 2 minutes.

    Add Tomatoes and Spices

    Stir in the pureed tomato, coriander powder, cumin powder, turmeric powder, and red chili powder. Cook for about 5 minutes until the mixture thickens and the oil separates.

    Cook the Vegetables

    Add the diced potatoes and chopped cauliflower to the pan. Stir well to coat the vegetables with the spice mixture. Season with salt.

    Simmer

    Pour in enough water to just cover the vegetables. Bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the potatoes and cauliflower are tender.

    Finishing Touches

    Once cooked, remove from heat and stir in the chopped fresh coriander leaves. Adjust salt to taste.
